			<content:encoded><![CDATA[<p>Chapati is a flat, soft and thin bread. It is enjoyed all over East Africa but the recipe is originated from India and bought to East Africa by the Indian traders centuries ago. It can be served with stews for lunches or dinner or with butter for breakfast. It can be made with whole wheat flour, All-purpose flour or mixture of both.</p>
<h1>Chapati recipe</h1>
<p><strong>Make 5 chapatis</strong></p>
<p><strong>Prep time:</strong> 30 minutes         <strong>Cooking time:</strong> 90 second each Chapati</p>
<p><strong>Ingredients</strong></p>
<p>500g   All-purpose flour or whole wheat flour</p>
<p>100 ml of warm water</p>
<p>2 to 3 tablespoons vegetable oil</p>
<p>½ tsp of salt or to taste</p>

<strong>Direction</strong></p>
<p><strong>Step1:</strong>  In a large bowl add the half of the water (50ml) and the salt. Stir until the salt dissolve</p>
<p><strong>Step2:</strong> Add the flour in the salted water and use your hand to mix well. Then add the vegetable oil and mix well.</p>
<p><strong>Step3:</strong>  Gradually pour the remaining water on flour mixture while mixing until the dough form a ball and is soft. You dough should not be sticking to your hand at all. If the dough is sticking add a little more flour or if it is too dry add a bit of water.</p>

<p><strong>Step4:</strong> Transfer the dough on your kitchen counter and knead it for 10 minutes. You movement should be fast and energetic. When you finish kneading your dough, it should be smooth, soft and elastic if it is not knead again.</p>
<p>Kneading the dough is very important if you don’t want the chapatti to become hard.</p>

<p><strong>Step5:</strong> Pour a generous amount of vegetable oil on your hand and divide the dough into 5 small balls. Then cover with a napkin and let them rest for 15to 20 minutes.</p>

<p><strong>Step6:</strong> Use a rolling pan to flatten the dough balls into a round shape until quite thin. if the dough is sticking to the rolling pan sprinkle  with a little bit of  flour.</p>

<p><strong>Step7:</strong> Heat a non stick pan on medium high heat and add the chapati. Wait for 45 second or till you see bubbles over the top, then flip  and cook the other side. You can brush the chapattis with vegetable oil on top. The cooking time should not exceed 2 minutes. Remove and cook the remaining until done.</p>

			<content:encoded><![CDATA[<p>Afang  soup is a made from Okazi leaves. Afang soup is also known as Eru in Cameroon and the leaves are called Mfumbua in Congo. There is ton of way to make this dish but this is just a basic recipe that you are going to love. The fresh leaves also known as <em>Gnetum africanum </em>and are not always easy to get outside Africa but you get the dried leaves in your African store.</p>
<h1>Afang Soup Recipe</h1>
<p>Serve: 2</p>
<p>Time: 40 min</p>
<p><strong>Ingredients:</strong></p>
<p>1 ½ cups Okazi leaves/ Afang leaves / Eru, washed and finely hopped</p>
<p><em>Below you will find a  picture of the leaves</em></p>
<p>400g beef or cow skin, cubed</p>
<p>2 tablespoons ground crayfish</p>
<p>1 onion, sliced</p>
<p>Spring onion, chopped</p>
<p>1 smoked fish, bones removed</p>
<p>½ cup Periwinkles, optional</p>
<p>1 ½ cups water leaves or spinach, washed and chopped</p>
<p>150 ml palm oil or to taste</p>
<p>2 bouillon cubes</p>
<p>Salt, to taste</p>
<p>3 cups water</p>

<strong>Direction:</strong></p>
<p><strong>Step1</strong>: Add the meat in a pot with one cup of water. Add a bouillon cube and cook for 30 minutes or until the beef is tender. More water can be added if necessary.</p>

<p><strong>Step 2:</strong> When the beef is tender, add in the spinach or water leaves and 2 cups of water.  Add the onions and spring onions, then let simmer 15 minutes.</p>

<p><strong>Step3:</strong> Add the Eru/ Okazi leaves you can if you want blend the leaves in a food processor before adding in the sauce. Stir the whole together and pour in the palm oil. Add the chilies or any hot pepper and cook for 5 more munites.</p>

<p><strong>Step4:</strong> Add in the ground crayfish and  the smoked fish. This is time to also add the periwinkles. Salt and add chili powder to your taste, then reduce the heat and cook on low for 10 minutes.</p>
<p>When it is ready served FUFU, Gari or pounded yam. You can even serve with rice.</p>

<p><strong>Direction:</strong></p>
<p><strong>Step1:</strong>  Soak the beans overnight and peel to remove the skin. If you don’t know how to remove the skin read my recipe for Akara.</p>
<p>Removing the bean skins is a little bit time consuming, you can skip that step by using bean flour instead of dried beans.</p>
<p><strong>Step2: </strong>In a food processor or blender, add onion, ground crayfish, chili pepper, tomato stew, bouillon cube and 2 drops of water. Blend until smooth.</p>
<p><strong>Step3: </strong> In the same food processor add the black eyed peas.  Gradually the peas with drops of water and blend until smooth.</p>
<p><strong>Step4: </strong>Pour the mixture in a large bowl and season with salt, thyme, curry powder, oil and mix well.</p>
<p><strong>Step5: </strong>Spoon the batter mixture in your container. Make sure not to fill it up because it will rise up once it starts to cook. Add a hard boiled egg in each container. This is also the time to add the optional ingredients</p>
<p>You can use aluminum small aluminum or plastic bowl or you can just fold and <a href="http://www.allnigerianrecipes.com/howto/prepare-moi-moi-containers.html" target="_blank">use aluminum foil</a>.  Cooking the moyin moyin in aluminum foil is extremely fast.</p>

<p><strong><em>Tips</em></strong>: If you are using plastic container, make sure to grease the bottom of the container before adding the mixture. That will make it easier to remove when it is done.</p>
<p><strong>Step6:</strong>  Add water enough water in a pot and place a steamer on top.</p>

<p>Then place fill container on the steamer cover with aluminum foil and replace the lid. Steam for 40 min, check occasionally the water level.</p>
<p>Tip: Use a tooth stick or a fork to stick in the middle of the moi moi if it comes out clean then it is ready.</p>
<p>Let it cool down for 10 min and serve.</p>

<h1>Eba Recipe</h1>
<p>Serves: 2</p>
<p><strong>Ingredients:</strong></p>
<p>2 cups  Gari (you can get the Gari at your African store)</p>
<p>3 to 4 cups Boiling Water (depending on the consistency you want)</p>
<p>Salt (optional)</p>

			<content:encoded><![CDATA[<p><em>Egusi Soup</em> also called <em>Agusi stew</em> is a common stew in many African countries, in Nigeria <em>Egusi soup</em> is enjoyed almost every day. It is made from ground melon seed and can be served with any type of <em>FuFu</em> ( pounded yam, Gari ….) .  Here you will find out an easy way to make Egusi stew yet very delicious.</p>
<h1>Egusi  Soup Recipe</h1>
<p>Serves: 4</p>
<p><strong>Ingredients</strong><br />
1 cup Ground Egusi</p>
<p>½ cup palm oil</p>
<p>Dried fish, smoked fish or stock fish, to taste</p>
<p>200g Beef or goat meat, chopped into small size</p>
<p>150 g chicken (optional)</p>
<p>2 onions, sliced</p>
<p>2 gloves garlic, chopped</p>
<p>½ tsp thyme leaves</p>
<p>1 tsp curry powder</p>
<p>1 bouillon cube or Maggi</p>
<p>1 large tomato, mashed or blended</p>
<p>1 tsp tomato paste</p>
<p>Fresh chili pepper or chili powder, to taste</p>
<p>Spinach leaves, pumpkin or bitter leaf, (or any leaf)</p>
<p>1 tbsp ground Crayfish or ground dried shrimp</p>
<p>½ tsp chili powder</p>
<p>Salt, to taste</p>
<p>Water</p>

<p><strong>Direction:</strong></p>
<p><strong><span style="text-decoration: underline;">Step 1</span></strong>: In a cooking pot add the meat and assorted meat (chicken or cow skin), then season with one sliced onion, the chopped garlic, thyme leaves, curry powder and the bouillon cube.</p>
<p><strong><span style="text-decoration: underline;">Step 2: </span></strong>Cover the pot with enough water (around 2 cups) and cook for 30 min or until the meat is almost tender.</p>

<p><strong><span style="text-decoration: underline;">Step3: </span></strong>Then add the dried fish in pot, should have soak the dried fish in water for at least 20 min. Cook for another 10 min and set aside.</p>
<p><strong><span style="text-decoration: underline;">Step 4: </span></strong>In another saucepan, heat the palm oil and add the remaining onion, mashed tomato and tomato paste and cook for 15 min.</p>

<p><strong><span style="text-decoration: underline;">Step 6: </span></strong>In a bowl of water add the ground Egusi and mix well to make a paste.</p>
<p><strong><span style="text-decoration: underline;">Step 7: </span></strong>Pour the Egusi paste in the sauce and stir fry for 10 minutes on very low heat.</p>
