Let’s start with West African cuisine (why? Just because I am from West Africa). West Africa comprises of seventeen (17) countries. West African main dishes are made with starch served with stews or soup.  Stews are cooked with fish, chicken, beef, lamb or goat meat. Hot chilies are added in almost all soups/stews. Countries like Nigeria, Liberia, Sierra Leone and Guinea eat a lot of chilies.
