Chicken and beans

Beans are the most complete and nutritious food, they are a common course of protein throughout Africa. There are many ways of cooking beans, they can be cooked with rice (rice and beans), with beef, (Beef and beans) or alone (in a vegetarian way). My favorite way to cook beans is with chicken, I love how chickens add a wonderful taste to the beans.

Chicken and beans

Serves: 4
Ingredients:

2 cups of dried beans, you can use any type of beans (white beans, black eyed peas or African beans)

4 pieces chicken , i used the legs

3 tbsp vegetable oil

2 tomatoes, mashed

1/2 tbsp tomato puree

1 large onion, minced

4 gloves garlic, minced

1 bouillon cube or maggi

1 tsp grated ginger

salt  and pepper to taste

Direction:

Note: Soak the beans for at least 3 h or overnight.

Step1:  Put the beans in a pot, cover with water and add a  tsp of salt, then bring it to boil. Cook until the beans are tender, approximately 1h.

Step2: Once the beans are tender, remove them from the pot and set a side.

Step3: Heat the oil in another saucepan and add the chicken, onion, bouillon cube,garlic, grated ginger and black pepper. Stir fry for 5 min .

Step4: Add the mashed tomatoes, tomato paste and 2 cups of water.  Simmer for 15 min.

Step5: Add the cooked beans and salt to your taste.

Cook until the liquid is totally absorbed.

Serve with bread . Enjoy!!!!
