There are many ways to grill a fish but a delicious grilled fish calls for a good marinade sauce. This African style grilled fish is a delicious recipe for whole fishes such as tilapia, red snappers, sea bass, etc.
This is a famous recipe in many African countries where some call it Poisson braisé. The marinade sauce recipe varies depending on the country but this is the most delicious way I have found to grill a fish.
To make this you can use an outdoor grill, a grilling pan or an oven.

Ingredients:
1 fish (tilapia, red snapper, sea bass)
For the Marinade sauce you will need:
1 medium onion, finely grated
1 tbsp grated ginger
1 tbsp finely chopped parsley
1 tsp garlic, grated
1 tbsp lime juice
1 bouillon cube or Maggi jumbo
1 tsp black/ white pepper
1 tbsp oil
½ tsp chili powder or to taste

For the hot onion sauce you will need:
1 tbsp vegetable oil
1 onion, sliced
1 tomato, mashed
1 tbsp ground fresh chilies
1 bouillon cube or Maggi
1 tbsp lime juice
½ cup of water
½ tsp black/white pepper

Direction:
Preparing the marinade sauce:
In a deep bowl add the onion, ginger, parsley, garlic, lime juice, bouillon cube, black pepper, oil and chili powder. Then mix all together to make a thick paste.
Next prepare your fish, use your knife to make some space in between the fish.
Then coat the fish with the marinade sauce really well. Put everywhere even inside the fish. Let the fish marinate for 1 hour or overnight in your refrigerator.
Preheat the grill or oven. Then grill the fish for 30 min, around 15 min each side. The grilling time will depend on the size of the fish. The fish is ready when all the juice is absorbed.
Making the hot onion sauce:
Heat the oil and fry the onion for 2 min. Then stir in the tomato. Add bouillon cube, black pepper, lime juice, chili and fry for 2 more min. Then add half cup of water and cook until the onions are tender.
When the fish is ready serve it with the onion sauce as side dish with Attieké or fried plantain.
