Pumpkin Soup Recipe – Liberian Cuisine

The Liberian version of pumpkin soup is totally different from the western one. Liberian pumpkin soup is more like a thick stew and it is served  over rice.This is a simple and easy to make recipe. The soup is traditionally cooked with palm oil but you can use any vegetable oil. Scroll down and discover how to make this delicious pumpkin soup.

Preparation time: 15 min

Cooking time: 30 min

Serve: 4

Ingredients:

1 medium squash (pumpkin), peeled , de-seed and cubed

2 fresh tomato, mashed

1 tbsp tomato paste

1 large onion, minced

4 tbsp of palm oil

1 bouillon cube

300g of meat, cubed (optional)

1 full tbsp of fish, pre boiled and bones removed or smoked fish

Black or white pepper

Salt

Chili pepper, to taste

Water

Direction:

Step1: In a saucepan, heat the oil and fry the onion with a bouillon cube for 5 min.

Step2: Add the tomatoes and black pepper. Fry for 3 more minutes.

Step3: Stir the pumpkin in the sauce, add the meat and cover with water. Simmer for 20 min

Step4: Mash the pumpkin in the soup and add the fish. Let simmer for 10 more min. To finish add some salt and grind chili pepper to your taste.

Serve hot over rice.

Enjoy!!!

    [..YouTube..] @jacquiatan Thank you.My mom always bring me palm oil and other African ingredients from Africa. I don’t make my own, you can just buy it. I would need palm nut to make palm oil and it is not always easy to find it here.:)
