Okra soup (Serve with Toh/Banku/Ugali)

Few months ago , I posted a video recipe on how to make “Toh” , today, in this episode I am going to show you how to make Okra soup that will taste wonderful with Toh/ ugali/ fufu. What I love about this soup is the easiness of making it and you’ll eventually always ask for some more. In this recipe, I used dried okra powder, but if you can’t find it just use some blended fresh okra, simply blend your fresh okra and substitute with that.

Ingredients: 2 Tbsp dried okra powder

1 Tbsp smoked fish powder

200g beef 3 cups of water

1 and ½  tbsp of peanut butter

1  pre-boiled and boneless fish

1 /2 cup of spring onion, sliced

1 onion slice

1 bouillon cube

Chilies and salt to taste

 

 

Direction:

In the food processor, add the meat ,fish, onion , spring onion, chilies and one bouillon cube, then blend the whole together.

Next, in a casserole add some water,then add the mixture and the peanut butter, bring it to boil and add the smoked fish powder. Let it simmer  for 10min , then salt and add the okra powder.

Mix the whole very well and let it cook for another 5 min. When ready serve with some Toh or Fufu.
