Spinach and Beef Stew – Sauce d’epinards

The health benefits of spinach and its ability to help prevent some diseases are well known. In addition to these benefits, spinach tastes great when you know how to cook it.In all the hundreds of different ways of making spinach, the one made with beef is the one that I am going to show you how today, In Ghana there is also a similar recipe called Shoko.This Beef and Spinach stew will give you an unforgettable experience in taste , So don’t forget to give it  a try :) !

Spinach stew

 

Time: 50mn

Serves: 4

Ingredients:

2 bunches of spinach or frozen spinach, chopped

400g beef, cubed

3 fresh tomatoes, mashed

½ tablespoon tomato paste

1 onion, sliced

2 gloves garlic, chopped

1 tablespoon fresh ginger, minced

Salt to taste

1 bouillon cube

2 cups water or beef stock

3 fresh chilies

½ Tsp cayenne pepper

Directions:

  1. First, put the spinach in a casserole and boil for 10mn, then drain its from the water and set aside.
  2. Next, heat the oil, add the onion and beef, sauté for 5min over high heat.
  3. Then, add the garlic, ginger and the bouillon cube, stir very well and add the fresh tomatoes and tomato paste with 1 cup of water (or beef stock), let it simmer for 30mn or until the beef is tender.
  4. When the beef is ready, add the spinach, cayenne pepper, chilies and salt.
  5. Then add another cup of water and let simmer for another 10min.

 

Serve with rice or Ablo and enjoy!
