In Africa, we have many different ways to cook sweet potato leaves, From Guinea to Congo each country has it own way to cook this recipe that why in this article I am going to show you how do we cook it in Guinea. Sweet potato leaves are very rich and delicious. So let’s get started.
Time: 40 mn
Ingredients:
200g sweet potato leaves, cut finely
200g beef, cut into cubes
1 fish
6 okra, cut finely
Red pepper ( to taste)
100ml of palm oil
1 big onion, sliced
1 or 2 seasonings
salt ( to taste)
Some smoked fish if you like
Directions:
- In the pan put the meat, fish , 1 cup of water and salt, then let’s it boil for 10mn.
- Next, remove the fish, add the leaves with another cut of water and cook the whole for 5mn.
- Next, add the onion, the seasonings and palm oil in the pan .
- Next, put the red pepper and salt. Let’s simmer for another 5mn.
- Then add the pre-boiled fish without the bones and the okra.
- Stiring regularly, the sauce is ready when the liquid is totally absorb (around 10mn)
Serve it with rice and enjoy.
